Eggplant-Tomato Stack

Ingredients
- 8 sl eggplant
- green olive tapenade
- 8 sl tomato
- 8 sl Mozzarella or goat cheese
- 8 lvs fresh basil
- olive oil
Instructions
- Coat the eggplant with olive oil, season with salt and pepper, then broil both sides.
- Coat each slice with olive tapenade, top with tomato, cheese, oil, and basil leaf.
- Plate and serve.
